A quick and easy lunch recipe that my kids LOVE (even if I add a few green things to them!)
To make 12 Bread Pies…
12 slices of bread
butter
4 eggs
1 cup cheese
diced ‘whatever-you-feel-like-adding’… for us it was ham and onion.
Muffing tray
1. Cut the crusts off the bread and butter one side. (Yes, that is a little boy’s finger in the butter!)
2. Cut bread slices diagonally.
3. Arrange diagonal slices, butter side down, in muffin tray, pushing bread together lightly to make a pie crust.
4. Beat eggs. Add cheese.
5. Spoon cheesy egg mixture into the little pie crusts. Let egg soak into bread for a few minutes. Add a t-spoon of diced ingredients. Cover with another spoonful of cheesy egg mixture.
6. Bake in oven at 350 degrees F (180 degrees C) for 20 – 30 minutes or until egg is cooked through and bread has turned golden.
7. Enjoy!

These are great ~ nutritious, easy and quick! I’m not sure if my picky eater will go for them but I sure will ;0)
