As promised, my yummy crepe recipe… Best way to use up all those eggs from the egg blowing!
Crepes,
* two eggs
* 1 cup flour
* 1/2 cup milk
* 1/2 cup water
* 2 Tbsp melted butter
* 1/4 t salt
In a bowl… beat the eggs, mix in the flour, add milk, water, butter and salt and whisk until the consistency of cream.
Let stand for at least 10 minutes.
Heat pan and spray with olive oil (or any other oil or butter). Put a soup ladle sized spoon of batter into the hot pan and giggle around until pan is coated with a thin layer of batter. When the batter starts to bubble, turn the crepe to brown the other side.
Keep cooked crepes warm in the oven while you make the others.
We like a savory filling of mushrooms, garlic and onions…
Brown together in a saucepan.
Add a 1/2 a cup of cream and let the sauce reduce.
Fill each crepe with the savory filling and roll it up. Top with grated cheese and serve with a wedge of lemon.
Desert is a crepe sprinkled with sugar, cinnamon and lemon juice.
Verdict – YUM!!!

Yum! Except for the mushies… Id have to substitute with something else like zucchini =)
I love savory crepes. I add a little bit of Herbs de Provence to the batter to make it extra special.
